Noma, in Copenhagen, however, has the distinction of being named the world’s best restaurant on three separate occasions, in 2010, 2011, and 2012. The restaurant may have lost its crown in 2013 (Noma is now #2), but that certainly doesn’t mean that it has lowered its lofty standards.
Situated in a former warehouse on the docks of the neighbourhood of Christianshavn, in central Copenhagen, Noma’s chef-patron René Redzepi is famed for his unique, philosophical approach to cooking. The two Michelin Star restaurant may look unassuming, with its simple decor, but Redzepi’s menu is positively teaming with flavoursome treats that you won’t find anywhere else.
Noma’s cuisine is utterly unique and represents Redzepi’s innovative take on traditional Nordic dishes. Far from confining himself to simply utilizing local and seasonal produce, Redzepi insists that his dishes contain only food foraged from the local soil and sea. Not only does this ensure that dinners are treated to the freshest ingredients, it also means that dining at Noma is an opportunity to sample wild berries, plants and obscure delicacies not traditionally served in other restaurants.
With only twenty servings for lunch and dinner, daily, nabbing a table at Noma is no mean feat in itself. Waiting lists for the restaurant are several months long, with diners lining up to spend over $250 each for the most basic menu.
