Pineapple Mojito cocktail

Mojitos typically ooze summer enjoyment with their delicate balance of citrus flavors, sugar and sugar-based spirits, along with some mint, of course. Cocktails can be deceptively simple, and yet still as refreshing as other, more complex drinks.

If you’re searching for that perfect, light summer drink to awaken your senses through citrus and herbal notes, the Pineapple Mojito Cocktail may be just what you’ve been searching for. Take your taste buds on a journey with the fruity flavor of pineapple and pineapple-infused rum combined with Grand Marnier. Summer drinks have never been better.

Here is the Pineapple Mojito Cocktail Recipe:

Ingredients:

For the Simple Syrup:

1 cup water

2 cups sugar

For the Cocktail:

12 mint leaves

2 oz. fresh pineapple chunks

1 oz. fresh lime juice

1 oz. simple syrup

2 oz. pineapple-coconut rum (like Bacardi Fusion)

½ oz. Grand Marnier

3 oz. ginger ale

Preparation:

1. First, you must make the simple syrup. Heat the sugar and the water in a small saucepan just until the sugar is dissolved. After it is dissolved, bring the mixture to a boil and set it aside to cool. Reserve any of the mixture not used in the recipe in a clean, airtight container for up to two weeks.

2. The cocktail is made in a Collins glass by first muddling the pineapple and the mint, afterwards filling the glass with ice. In an ice-filled cocktail shaker, mix together the rum, lime juice, simple syrup and Grand Marnier. Strain the mixture into the glass, and top the drink off with ginger ale.

There you have it, a drink that is sweet and full of summer spirit. Cheers.
